Technically every class can get a build or two that can benefit greatly from celestial gear, so just pick whatever you find cool. However, most people will say Guardian, but I think that's not the best option. I'd like to share some Revenant propaganda. With celestial gear you're getting gateway to almost every possible spec in the game as a Revenant.
If story and lore matter to you, sure go ahead and do you personal story. From a purely sylvari perspective, it is Season 2 that offers the most in lore. As for the boost, it's ok for an alt or for a very talented player. For the rest of us, it is a way of having too many different things to learn at once. Some classes you can but a lot of classes you aren't gong to be very efficient because completing maps in PvE is easy even if you jusr randomly press buttons.
Technically, yoou get some level rewards. If you have L40 scrolls, it is even booster! if you have a level 40 boost it's even better, since you can grab the lvl 40 BL-Key too. :D. im racist, human master race. :D. Use them for new characters and max them the rest to 80 with Tomes of Knowledge. Else there is the weekly story key farm.
Get to learn the game from the in-game hints given to you through leveling normally. Once you're comfortable with how the game controls and how combat works, go ahead and pop it on a toon you like. The biggest pitfalls to watch out for are: Not having any direction after level 80. If you're focused on story, this is unlikely to cause an issue for you, as you'll still have several expansions and many living story episodes to get through before it causes you problems.If you use the Level-80 Boost to advance your character to max level, you won’t get the level-up rewards you would have earned from normal leveling.
